In Liu’s study, women eating large amounts of potatoes, breakfast cereals, white bread, muffins, and white rice had elevated C-reactive protein levels, indicating high levels of inflammation and an increased risk of heart disease. Overweight women who ate a lot of these foods had the highest and most dangerous CRP levels. All of these carbohydrates (and the fat they are often combined with) displace far healthier foods, such as anti-inflammatory vegetables, fruit, and fish.
