Poached Cod With Lemon Butter Sauce Seafood

Ingredients

  • 1 1/2 pounds cod fillets — thawed if necessary
  • 1 quart water
  • 1/4 cup lemon juice
  • 1 small onion — sliced
  • 1 bay leaf
  • 4 peppercorns
  • 4 whole cloves
  • 1 teaspoon salt

Lemon Butter Sauce:

  • 1/4 cup butter
  • 2 tablespoons lemon juice
  • minced parsley

Method

  1. Cut cod into serving-size pieces
  2. Combine water, lemon juice, onion and seasonings
  3. Bring to boil; simmer 20 minutes
  4. Add cod
  5. If necessary, add boiling water to cover cod
  6. Simmer, covered, 5 to 10 minutes or until cod flakes easily when tested with a fork
  7. Remove cod to platter
  8. Pour Lemon Butter Sauce over cod; garnish with parsley
  9. Makes 4 to 6 servings
  10. Recipe may be halved
  11. Lemon Butter Sauce: Melt butter; add lemon juice
  12. Serve warm
  13. Makes about 1/3 cup
