Ingredients
- 2 lbs. chicken breast, cubed
- 1 tbsp vegetable oil
- 1 shallot, finely chopped
- 1/4 white onion, chopped
- 2 Tbsps. butter
- 2 tsp lemon juice
- 4 garlic cloves, minced
- 1 inch ginger, minced
- 2 tsp garam masala
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 bay leaf
- 1/4 cup plain non fat yogurt 1/4 cup half and half
- 3/4 cup skim milk
- 1 cup tomato sauce
- 2 1/4 tsp cayenne pepper, or to taste 1 pinch salt
- 1 pinch black pepper
Method
- Pour the olive oil into a skillet and heat well
- Saute the onion and shallot until soft
- Mix the butter, ginger, lemon juice, garlic, garam masala, chili, cumin, cayenne and bay leaf
- Leave for about 1-2 minutes
- Mix in the tomato sauce and leave for about 2-3 minutes
- Add half the quantities of milk and yogurt and mix well
- Lower the heat and leave for 8-10 minutes ensuring to stir at internals
- Adjust seasonings with salt and pepper
- Place all the ingredients into a food processor and process until the mixture is well combined
- Mix in the chicken breast cubes into the crock pot and leave for about 4 hours
- Serve with cauliflower rice
