Chinese Chicken Congee Slow Cooker Recipe


Serves 4

Active Time 10 minutes :Porridge Natural/Quick Release

  • 5 cups water
  • 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
  • 1 cup jasmine rice, rinsed and drained
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon toasted sesame oil, plus more for garnish
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper (optional)
  • chopped scallions, for garnish


  1. In the Instant Pot, combine the water, chicken, rice, ginger, garlic, sesame oil, soy sauce, salt, and pepper (if using)
  2. Secure the lid on the pot
  3. Close the pressure-release valve
  4. Select the PORRIDGE setting
  5. At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure
  6. Stir to combine the ingredients
  7. Divide among four bowls
  8. Drizzle each with toasted sesame oil, sprinkle with scallions, and serve
  9. If you don’t have a Porridge function on your Instant Pot, select MANUAL and set at HIGH pressure for 20 minutes
