Best Chicken Creole Slow Cooker Recipe

Ingredients

  • 2 tbsps (28 g) unsalted butter
  • ½ cup (75 g) chopped green bell pepper
  • ¾ cup (120 g) chopped onions
  • ½ cup (50 g) chopped celery
  • 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes
  • ¼ teaspoon pepper
  • ¼ teaspoon cayenne
  • 1 cup (235 ml) water
  • 280 g cubed cooked chicken breast
  • 115g mushrooms, sliced

Method

  1. Melt butter in slow cooker set on high
  2. Add green pepper, onions, celery, tomatoes, pepper, cayenne, and water
  3. Cover and cook on high, about a half hour, while preparing remaining ingredients
  4. Add chicken and mushrooms
  5. Cover and cook on low 2 to 3 hours
  6. Yield: 6 servings
  7. Per serving: 188 g water; 138 calories (37% from fat, 46% from protein, 17% from carb)
