Crock Pot Brazilian Curry Chicken Slow Cooker Recipe


  • 1.5-2 lbs. chicken (boneless, skinless thighs AND breasts)
  • ¾ cup coconut milk
  • 2 Tbsps. tomato paste
  • 3 garlic cloves, minced
  • 1 tbsp ground ginger
  • 4-6 Tbsps. curry powder
  • 2 bell peppers, chopped into 1 cubes
  • 1 yellow onion, thinly sliced
  • salt and pepper, to taste
  • 1 cup chicken broth


  1. Whisk together coconut milk, Tomato paste, ginger, garlic, curry powder, salt and pepper
  2. Add the bell pepper and onions after
  3. Then add the chicken and pour the broth over it
  4. Mix the ingredients together and make sure that the curry mixture covers the chicken completely
  5. Cover and cook for 4 to 5 hours on high or 6 to 8 hours on low
  6. Serve
