Coronation Chicken Recipe

Ingredients

Makes 2

  • ½ small onion, finely chopped
  • 1 tbsp vegetable oil
  • ½ tbsp good-quality curry powder
  • 3 tbsp mayonnaise
  • 3 tbsp plain yogurt
  • 1 tbsp mango chutney
  • 9oz (250g) leftover cold roast chicken meat, chopped A small handful of fresh cilantro (coriander) leaves, chopped A small handful of toasted slivered (flaked) almonds (optional) Juice of ½ lime, or to taste
  • sea salt and black pepper, to taste
  • 4 slices soft white bread

Method

  1. In a smal frying pan or skil et, gently cook the onion in the vegetable oil, until it starts to color
  2. Add the curry powder and cook for 2 minutes, stirring al the time to prevent burning
  3. Remove from the heat and let cool
  4. Mix together the mayonnaise and yogurt, then stir in the mango chutney
  5. When the onion mixture is cool, add that too
  6. Mix this sauce with the chicken meat
  7. Stir in the cilantro (coriander) and toasted almonds, if using
  8. Add a little lime juice (you can always add more) and salt and pepper, to taste
  9. Spread 2 slices of bread with the chicken mixture, then top with the remaining 2 slices of bread
  10. Cut the sandwiches into triangles, fingers, or squares, and serve
