Crock Pot Roasted Tomato Chicken Slow Cooker Recipe


  • 4-5 lb. organic kosher chicken
  • 2 Tbsps. of ghee
  • 2 onions, chopped medium (or 2 cups of your favorite alliums)
  • 6 cloves of garlic, peeled
  • 1 tsp tomato paste (you can use up to a tbsp to add more umami)
  • ¼ cup chicken stock
  • ¼ cup white wine replace with 1/4
  • 1 cup extra chicken stock if on Whole30
  • sunny paris seasoning or your favorite seasoning
  • kosher salt
  • freshly ground pepper.


  1. Place the ghee in a skillet and heat until the ghee is melted
  2. Toss in the onions, garlic and tomato paste and leave for about 8-12 minutes
  3. Season the chopped vegetables with salt and pepper depending on your taste
  4. Pour the wine or chicken stock and deglaze the skillet
  5. Transfer the browned ingredients into a crock pot
  6. Season the chicken with salt and pepper and any poultry seasoning of your preference
  7. Place the chicken pieces in the crock pot, cover and cook for about 4-6 hours on low
  8. Once the chicken is cooked remove from the crock pot and allow to cool for about 25 minutes
  9. Use your hands and split up the chicken and serve warm with gravy
