Crock Pot Roasted Tomato Chicken Slow Cooker Recipe
Ingredients
- 4-5 lb. organic kosher chicken
- 2 Tbsps. of ghee
- 2 onions, chopped medium (or 2 cups of your favorite alliums)
- 6 cloves of garlic, peeled
- 1 tsp tomato paste (you can use up to a tbsp to add more umami)
- ¼ cup chicken stock
- ¼ cup white wine replace with 1/4
- 1 cup extra chicken stock if on Whole30
- sunny paris seasoning or your favorite seasoning
- kosher salt
- freshly ground pepper.
Method
- Place the ghee in a skillet and heat until the ghee is melted
- Toss in the onions, garlic and tomato paste and leave for about 8-12 minutes
- Season the chopped vegetables with salt and pepper depending on your taste
- Pour the wine or chicken stock and deglaze the skillet
- Transfer the browned ingredients into a crock pot
- Season the chicken with salt and pepper and any poultry seasoning of your preference
- Place the chicken pieces in the crock pot, cover and cook for about 4-6 hours on low
- Once the chicken is cooked remove from the crock pot and allow to cool for about 25 minutes
- Use your hands and split up the chicken and serve warm with gravy
