Air Fryer Quick Chicken Fajitas

Ingredients

SERVES 2.

  • 10 ounces boneless, skinless chicken breast, sliced into 1/4 strips
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 medium onion, peeled and sliced
  • 1/2 medium green bell pepper, seeded and sliced
  • 1/2 medium red bell pepper, seeded and sliced

Method

  1. Place chicken and coconut oil into a large bowl and sprinkle with chili powder, cumin, paprika, and garlic powder
  2. Toss chicken until well coated with seasoning
  3. Place chicken into the air fryer basket
  4. Adjust the temperature to 350°F and set the timer for 15 minutes
  5. Add onion and peppers into the fryer basket when the timer has 7 minutes remaining
  6. Toss the chicken two or three times during cooking
  7. Vegetables should be tender and chicken fully cooked to at least 165°F internal temperature when finished
  8. Serve warm
