Air Fryer Zucchini Parmesan Chips Recipe

Ingredients

SERVES 4.

  • 2 medium zucchini
  • 1 ounce pork rinds
  • 1/2 cup grated Parmesan cheese
  • 1 large egg

Method

  1. Slice zucchini in 1/4-thick slices
  2. Place between two layers of paper towels or a clean kitchen towel for 30 minutes to remove excess moisture
  3. Place pork rinds into food processor and pulse until finely ground
  4. Pour into medium bowl and mix with Parmesan
  5. Beat egg in a small bowl
  6. Dip zucchini slices in egg and then in pork rind mixture, coating as completely as possible
  7. Carefully place each slice into the air fryer basket in a single layer, working in batches as necessary
  8. Adjust temperature to 320°F and set the timer for 10 minutes
  9. Flip chips halfway through the cooking time
  10. Serve warm
