Air Fryer Taco-Stuffed Peppers Recipe

Ingredients

SERVES 4.

  • 1 pound 80/20 ground beef
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (10-ounce) can diced tomatoes and green chiles, drained
  • 4 medium green bell peppers
  • 1 cup shredded Monterey jack cheese, divided

Method

  1. In a medium skillet over medium heat, brown the ground beef about 7-10 minutes
  2. When no pink remains, drain the fat from the skillet
  3. Return the skillet to the stovetop and add chili powder, cumin, garlic powder, salt, and black pepper
  4. Add drained can of diced tomatoes and chiles to the skillet
  5. Continue cooking 3-5 minutes
  6. While the mixture is cooking, cut each bell pepper in half
  7. Remove the seeds and white membrane
  8. Spoon the cooked mixture evenly into each bell pepper and top with a 1/4 cup cheese
  9. Place stuffed peppers into the air fryer basket
  10. Adjust the temperature to 350°F and set the timer for 15 minutes
  11. When done, peppers will be fork tender and cheese will be browned and bubbling
  12. Serve warm
