Ingredients
SERVES 2.
- 2 tablespoons salted butter
- 1 small zucchini, sliced lengthwise and quartered
- 1/2 medium green bell pepper, seeded and diced
- 1 cup fresh spinach, chopped
- 1 medium Roma tomato, diced
- 2 large eggs
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
Method
- Grease two (4) ramekins with 1 tablespoon butter each
- In a large bowl, toss zucchini, bell pepper, spinach, and tomatoes
- Divide the mixture in two and place half in each ramekin
- Crack an egg on top of each ramekin and sprinkle with onion powder, garlic powder, basil, and oregano
- Place into the air fryer basket
- Adjust the temperature to 330°F and set the timer for 10 minutes
- Serve immediately
