Air Fryer Classic Mini Meatloaf Recipe

Ingredients

SERVES 6.

  • 1 pound 80/20 ground beef
  • 1/4 medium yellow onion, peeled and diced
  • 1/2 medium green bell pepper, seeded and diced
  • 1 large egg
  • 3 tablespoons blanched finely ground almond flour
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 2 tablespoons tomato paste
  • 1/4 cup water
  • 1 tablespoon powdered erythritol

Method

  1. In a large bowl, combine ground beef, onion, pepper, egg, and almond flour
  2. Pour in the Worcestershire sauce and add the garlic powder and parsley to the bowl
  3. Mix until fully combined
  4. Divide the mixture into two and place into two (4) loaf baking pans
  5. In a small bowl, mix the tomato paste, water, and erythritol
  6. Spoon half the mixture over each loaf
  7. Working in batches if necessary, place loaf pans into the air fryer basket
  8. Adjust the temperature to 350°F and set the timer for 25 minutes or until internal temperature is 180°F
  9. Serve warm
