Ingredients
SERVES 2.
- 1 tablespoon unsalted butter
- 5 ounces frozen spinach, thawed and drained
- 1/2 teaspoon garlic powder, divided
- 1/2 teaspoon salt, divided
- 1/4 cup chopped yellow onion
- 1/4 cup crumbled feta
- 2 (6-ounce) boneless, skinless chicken breasts
- 1 tablespoon coconut oil
Method
- In a medium skillet over medium heat, add butter to the pan and saute spinach 3 minutes
- Sprinkle 1/4 teaspoon garlic powder and 1/4 teaspoon salt onto spinach and add onion to the pan
- Continue sauteing 3 more minutes, then remove from heat and place in medium bowl
- Fold feta into spinach mixture
- Slice a roughly 4 slit into the side of each chicken breast, lengthwise
- Spoon half of the mixture into each piece and secure closed with a couple toothpicks
- Sprinkle outside of chicken with remaining garlic powder and salt
- Drizzle with coconut oil
- Place chicken breasts into the air fryer basket
- Adjust the temperature to 350°F and set the timer for 25 minutes
- When completely cooked chicken should be golden brown and have an internal temperature of at least 165°F
- Slice and serve warm
