Air Fryer Spinach And Feta-Stuffed Chicken Breast Recipe

Ingredients

SERVES 2.

  • 1 tablespoon unsalted butter
  • 5 ounces frozen spinach, thawed and drained
  • 1/2 teaspoon garlic powder, divided
  • 1/2 teaspoon salt, divided
  • 1/4 cup chopped yellow onion
  • 1/4 cup crumbled feta
  • 2 (6-ounce) boneless, skinless chicken breasts
  • 1 tablespoon coconut oil

Method

  1. In a medium skillet over medium heat, add butter to the pan and saute spinach 3 minutes
  2. Sprinkle 1/4 teaspoon garlic powder and 1/4 teaspoon salt onto spinach and add onion to the pan
  3. Continue sauteing 3 more minutes, then remove from heat and place in medium bowl
  4. Fold feta into spinach mixture
  5. Slice a roughly 4 slit into the side of each chicken breast, lengthwise
  6. Spoon half of the mixture into each piece and secure closed with a couple toothpicks
  7. Sprinkle outside of chicken with remaining garlic powder and salt
  8. Drizzle with coconut oil
  9. Place chicken breasts into the air fryer basket
  10. Adjust the temperature to 350°F and set the timer for 25 minutes
  11. When completely cooked chicken should be golden brown and have an internal temperature of at least 165°F
  12. Slice and serve warm
