Air Fryer Bacon Wrapped Cheese Stuffed Chicken Breast



  • 1 tablespoon  butter
  • 1/2 tablespoon oil
  • 1/2 medium onion, chopped fine
  • 3 tablespoon crumbled cheddar
  • 2 tablespoon soft cheese
  • 1/2 medium onion in chunks
  • 1 medium carrot in chunks
  • 1/4 each red, yellow, green peppers in chunks
  • 6 small mushrooms, halved (optional)
  • 1 large boneless, skinless chicken breast
  • 2 slices of smoked bacon, cut into strips

Ready for Air Fryer


  1. In a medium skillet over medium heat, add butter to the pan and saute chopped onion 5 minutes
  2. Remove from heat and place in medium bowl to cool leaving juice in pan.
  3. Add carrot chunks and cook 5 minutes
  4. Add peppers, mushrooms and onion chunks, stir and remove from heat to cool
  5. Fold cheddar and soft cheese into cooled onion mixture
  6. Slice half way into the side of the chicken breast, lengthwise and open out.
  7. Beat to flatten, add the cheese mix and roll
  8. Cover with bacon strips
  9. Place chicken breast into suitable sized oven dish
  10. Arrange vegetables around
  11. Preheat to 350°F (180c) then set the timer for 35 minutes
  12. Add 10 minutes if chilled before cooking
  13. Slice and serve warm
