Chicken Bacon Chowder Slow Cooker Recipe

Ingredients

  • 4 Cloves Garlic – Minced
  • 1 Shallot – Finely Chopped
  • 1 Leek – Cleaned, Trimmed, and Sliced
  • 2 Ribs Celery – Diced
  • 6 oz. Cremini Mushrooms – Sliced
  • 1 Medium Sweet Onion – Thinly Sliced
  • 4 tbsp Butter – Divided
  • 2 Cups Chicken Stock – Divided
  • 1 lb. Boneless, Skinless Chicken Breasts
  • 8 oz. Cream Cheese
  • 1 Cup Heavy Cream
  • 1 lb. Bacon – Cooked Crisp, and Crumbled
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Garlic Powder
  • 1 tsp Thyme

Method

  1. Place the shallot, garlic, leek, mushrooms, celery, onions, butter 2 tbsps , salt and pepper into the crock pot
  2. Pour about 1 cup of stock over the ingredients and mix well
  3. Place lid and cook the ingredients for 1 hour on low In the meantime, heat a skillet and melt the balance 2 tbsps of butter
  4. Place the chicken and brown on both sides for 5 minutes per side
  5. Transfer the browned chicken into a plate
  6. Pour the balance stock into the skillet and remove any chicken shreds left in the pan
  7. Add the stock into the crock pot along with the heavy cream, garlic powder, cream cheese and thyme
  8. Continue to stir until the cream cheese is completely dissolved and no pieces seen in the mixture
  9. Shred the chicken and place in the crock pot
  10. Mix in the bacon and combine all ingredients together
  11. Place lid, cover and let the ingredients cook for about 6-8 hours on low
