Ingredients
- boneless skinless chicken breasts
- ¾ cup (120 g) chopped onion
- 2-3 sweet potatoes, cubed
- ¼ cup (60 ml) orange juice
- ½ teaspoon minced garlic
- ½ teaspoon pepper
- 2 tsps (8 g) curry powder
Method
- Place chicken in slow cooker
- Cover with onions and sweet potatoes
- Combine orange juice, garlic, pepper, and curry powder
- Pour over vegetables and chicken in slow cooker
- Cover and cook on low 5 to 6 hours
- Yield: 4 servings
- Per serving: 155 g water; 162 calories (8% from fat, 45% from protein, 47% from carb)
Serve over rice and top with your choice of condiments: sliced green onions, shredded coconut, peanuts, or raisins
