Crock Pot Mango Chicken Stuffed Peppers Slow Cooker Recipe


  • 1½ lbs. chicken thighs
  • 1 lb. frozen mango chunks
  • 3 Tbsps. onion powder
  • 1 red pepper, finely diced
  • 4 cloves garlic, minced
  • 1-2 inch ginger, minced OR 1 tsp dried ginger
  • 1 tsp Chinese five spice
  • juice and zest of an orange
  • ¼ tsp red pepper flakes (optional) 2 tsps. salt
  • 1 tbsp honey or date paste, add at the beginning
  • 2 Tbsps. chopped cilantro + more for garnish (optional)
  • 2 tsps. arrowroot powder
  • 4-5 red bell peppers


  1. Add the first ten ingredients in the crock pot then cook this on high for 4 hours or until the chicken becomes tender
  2. Shred chicken lightly with the use of forks
  3. Put a tbsp of honey in the crock pot then mix the arrowroot along with a few tbsp of water
  4. Stir this together in the crock pot
  5. Add the cilantro and let the flavors come together and wait for the sauce thickens
  6. Divide the peppers in half and remove the seeds put the chicken into each half of pepper
  7. Put these on baking sheet then bake it at 350oF for ten minutes of until it becomes crisp tender
  8. Garnish this with cilantro
