Authentic Curried Chicken Slow Cooker Recipe
Ingredients
- boneless skinless chicken breasts, cubed
- 1 cup (260 g) low-salt salsa
- 1 cup (160 g) chopped onion
- 1 tbsp (6.3 g) curry powder
- 1 cup (230 g) sour cream
Method
- Place the chicken in the slow cooker
- In a medium bowl, combine salsa, onion, and curry powder
- Pour the sauce over the meat in the cooker
- Cover and cook on high for 3 hours or cook on low for 5 to 6 hours
- Remove chicken to serving platter and cover to keep warm
- Add sour cream to slow cooker and stir into salsa until well blended
- Serve over the chicken
- Yield: 5 servings
- Per serving: 161 g water; 173 calories (36% from fat, 44% from protein, 20% from carb)
Serve with brown rice or couscous
