Crock Pot Lemon Rosemary Chicken Slow Cooker Recipe

Ingredients

  • 2 large carrots, peeled and chopped
  • 1/2 cup chopped yellow onion
  • 2 lbs bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced
  • 1/4 tsp salt
  • black pepper to taste
  • 1/2 tbsp ground sage
  • 1/2 tbsp rosemary
  • juice of one lemon
  • 1 tbsp extra virgin olive oil

Method

  1. Place a layer of onions and carrots in the crock pot and place the chicken thighs with the skin side facing on top over the onions and carrots
  2. Add garlic, herbs and seasonings
  3. Squeeze the lemon juice and drizzle with olive oil
  4. Cook for 7 hours on low
