Ingredients

  • 1/2 pound ground pork
  • 1 pound ground turkey
  • 1 garlic clove, minced
  • 4 tablespoons pork rinds, crushed
  • 2 tablespoons shallots, chopped
  • 4 ounces mozzarella string cheese, cubed
  • 1 ripe tomato, pureed
  • salt and ground black pepper, to taste

Method

  1. In a mixing bowl, thoroughly combine all ingredients, except for the cheese.
  2. Shape the mixture into bite-sized balls.
  3. Press 1 cheese cube into the center of each ball.
  4. Place the meatballs on a parchment-lined baking sheet.
  5. Bake in the preheated oven at 350 degrees F for 18 to 25 minutes.
