Mediterranean Crock Pot Chicken Green Beans Slow Cooker Recipe


  • 1.5 lbs. boneless skinless chicken thighs
  • 1/2 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 14-oz. can whole tomatoes, drained and sliced
  • 8 oz. sliced mushrooms
  • 8 oz. marinated artichoke hearts,
  • drained
  • 4 oz. sundried tomatoes, drained and sliced
  • 3/4 lb. green beans
  • 2 Tbsps. capers
  • juice of 1/2 large lemon + the remainder for serving
  • 1/4 cup white wine
  • pinch red pepper flakes.
  • 1/4 cup chopped parsley, for serving salt and pepper, to taste


  1. Combine the onions, garlic, mushrooms, tomatoes, artichoke, sundried tomatoes, capers, green beans and the chicken in a crock pot
  2. Pour the lime juice on the rest of the ingredients in the crock pot and add the pepper flakes and the wine
  3. Stir all ingredients in the crock pot together, cover with lid and cook for 4 hours on high or 8 hours on low
  4. Adjust seasonings as required
  5. Transfer the ingredients from the crock pot onto a platter
  6. Serve garnished with parsley
