Ingredients
- 1 1/2 – 2 lbs. skinless, boneless chicken breasts or thighs
- 2 cups sliced fresh mushrooms
- 1 14 1/2 oz. can diced tomatoes
- 1 12 oz jar Delallo artichoke hearts
- 2 cups low sodium chicken broth
- 1 medium yellow onion, chopped
- 1/2 cup sliced pitted ripe olives, drained
- 1/4 cup dry white wine
- 2 Tbsps. curry powder
- 1 tsp cayenne powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- couscous and parsley for serving, if desired.
Method
- Mix the mushrooms, tomatoes, artichoke, broth, olives, onion, spices, thyme, wine and seasonings in a crock pot
- Remove excess fat from the chicken and toss into the crock pot
- Cover with lid and cook for 7-8 hours on low
- Garnish with parsley and serve with warm couscous
