Mediterranean Crock Pot Chicken Mushrooms Slow Cooker Recipe

Ingredients

  • 1 1/2 – 2 lbs. skinless, boneless chicken breasts or thighs
  • 2 cups sliced fresh mushrooms
  • 1 14 1/2 oz. can diced tomatoes
  • 1 12 oz jar Delallo artichoke hearts
  • 2 cups low sodium chicken broth
  • 1 medium yellow onion, chopped
  • 1/2 cup sliced pitted ripe olives, drained
  • 1/4 cup dry white wine
  • 2 Tbsps. curry powder
  • 1 tsp cayenne powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • couscous and parsley for serving, if desired.

Method

  1. Mix the mushrooms, tomatoes, artichoke, broth, olives, onion, spices, thyme, wine and seasonings in a crock pot
  2. Remove excess fat from the chicken and toss into the crock pot
  3. Cover with lid and cook for 7-8 hours on low
  4. Garnish with parsley and serve with warm couscous
