Ingredients
YIELD s 16 halves (4 per serving).:
- 8 mini sweet peppers
- 4 ounces full-fat cream cheese, softened
- 4 slices sugar-free bacon, cooked and crumbled
- 1/4 cup shredded pepper jack cheese
Method
- Remove the tops from the peppers and slice each one in half lengthwise
- Use a small knife to remove seeds and membranes
- In a small bowl, mix cream cheese, bacon, and pepper jack
- Place 3 teaspoons of the mixture into each sweet pepper and press down smooth
- Place into the fryer basket
- Adjust the temperature to 400°F and set the timer for 8 minutes
- Serve warm
