Air Fryer Quiche-Stuffed Peppers

Ingredients

SERVES 2.

  • 2 medium green bell peppers
  • 3 large eggs
  • 1/4 cup full-fat ricotta cheese
  • 1/4 cup diced yellow onion
  • 1/2 cup chopped broccoli
  • 1/2 cup shredded medium Cheddar cheese

Method

  1. Cut the tops off of the peppers and remove the seeds and white membranes with a small knife
  2. In a medium bowl, whisk eggs and ricotta
  3. Add onion and broccoli
  4. Pour the egg and vegetable mixture evenly into each pepper
  5. Top with Cheddar
  6. Place peppers into a 4-cup round baking dish and place into the air fryer basket
  7. Adjust the temperature to 350°F and set the timer for 15 minutes
  8. Eggs will be mostly firm and peppers tender when fully cooked
  9. Serve immediately
