Greek Rice Pilaf with Shrimp

Greek Rice Pilaf With Shrimp

Ingredients

  • recipe for: Pilaf Me Garides Rice Pilaf Shrimp
  • Serving Size : 10
  • 1 1/2 pounds shrimp
  • salt to taste
  • 1 medium onion
  • 3 stalks celery
  • 1 1/2 cups oil
  • 1 medium onion – chopped
  • 1 1/2 pounds tomatoes, peeled – strained or
  • 1 tablespoon tomato paste diluted with:
  • 1 cup water
  • 2 1/2 cups raw rice

Method

  1. Wash shrimp and put into large pot
  2. Add enough water to cover.
  3. Add salt and whole onion and celery, and bring to a boil.
  4. Cook for about 5 min Remove the shrimp with slotted spoon and reserve liquid.
  5. Shell and devein the shrimp.
  6. Heat the oil in large pot
  7. Saute chopped onions until light golden.
  8. Add shrimp, turning 2 or 3 times.
  9. Add tomatoes (or tomato paste).
  10. Cook about 5 min more, then remove shrimp.
  11. Set aside and keep warm.
  12. Measure liquid in which shrimp were boiled, allowing 2 1/2 c for each cup of rice
  13. Add liquid to the pot with the tomato sauce.
  14. Bring to the boil and add the rice.
  15. Stir for the first few minutes to prevent sticking.
  16. Cook about 12 to 15 min until the rice is tender but has not absorbed all of the liquid.
  17. Add 2/3 of the shrimp.
  18. Mix well.
  19. Remove the pot from the heat.
  20. Cover with a clean towel and cover the towel with the lid.
  21. Let stand 5 to 10 min, until all liquid is absorbed.
  22. Mold rice into a pyramid shape.
  23. Garnish with remaining shrimp.
  24. Serves 6-10.
