Rum-Sauteed Pineapple Bananas

Ingredients

Makes 4 servings

  • 1/4 cup vegan margarine
  • 1/2 cup sugar
  • 1/2 pineapple, peeled, cored and cut into 1-inch chunks
  • 2 ripe bananas, cut into 1/4-inch slices
  • 1/4 cup dark rum
  • 2 tablespoons toasted coconut
  • 2 tablespoons unsalted toasted pecans, coarsely chopped

Method

  1. In a large skillet, heat the margarine and sugar over medium heat
  2. Cook, stirring, until the sugar dissolves, about 2 minutes
  3. Add the pineapple and bananas and cook for 1 to 2 minutes
  4. Carefully add the rum and simmer until the alcohol cooks off, about 2 minutes
  5. Spoon into 4 dessert dishes and sprinkle with coconut and pecans
