Baileys Whipped Coffee Recipe

Ingredients

  • serves 2
  • 2 tbsp instant coffee
  • 2 tbsp sugar or granulated sweetener
  • 2 tbsp hot water
  • 2 tbsp whisky, rum or bourbon
  • 4 tbsp Baileys Irish Cream or to taste
  • ¼ tsp vanilla extract
  • ½ cup skimmed milk or your choice of milk
  • grating of chocolate to serve

Method

  1. Put the coffee granules and sugar in a small deep bowl
  2. Add hot water and stir together to combine
  3. Start whisking on a low speed and increase the speed gradually as the coffee foams up and whip on maximum once soft peaks start to form
  4. Continue until the coffee forms firm peaks (like meringue)
  5. Add the milk to a mixing jug half filled with ice
  6. Add Whiskey, Rum or Bourbon plus the Baileys Irish Cream and vanilla extract
  7. Stir well
  8. Strain into two small glasses over ice filling about ¾ full
  9. Spoon a good amount of whipped coffee over the top
  10. Garnish with a grated chocolate or dust with cinnamon or nutmeg
