Potato Peas Corn Mash Recipe

  • 11/2 pounds red potatoes, unpeeled and cut into roughly 11/2-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1/4 cup diced red onion
  • 2 cups frozen peas
  • 1 cup frozen or canned corn
  • sea salt and cracked black pepper

Method

  1. Bring a large pot of water to a boil, then add the potatoes
  2. Cook until the potatoes are tender and can be easily pierced with a fork, about 30 minutes
  3. To a small nonstick skillet over medium heat, add the olive oil, garlic, and onion
  4. Cook until the onion is brown and translucent, about 5 minutes, being careful not to burn the garlic
  5. Remove the skillet from the heat and set aside
  6. Remove the potatoes from the boiling water-keep the water going-and place them in a large bowl
  7. Add the frozen peas to the water and cook for 3 minutes, then remove
  8. Add about 11/2 cups of the peas to the bowl with the potatoes and reserve the rest
  9. Mix and mash the potatoes and peas until they are well combined
  10. It should resemble a mash with flecks of green throughout
  11. Fold in the remaining peas and corn
  12. The heat from the potatoes and peas will thaw the corn
  13. Add the sauteed garlic and onion and any olive oil left in the pan, and mix everything together
  14. Season to taste with salt and pepper
  15. Serve
