Classic Portuguese Kale Soup Recipe

Ingredients

  • 3 qt. cold water
  • 1 1/2 c. lg. Northern white beans
  • 1-2 sticks Portuguese linguica
  • 5 potatoes, chopped
  • 1 (15 oz.) can kidney beans (for color)
  • 6 kale leaves mustard greens, chopped

Method

  1. Add beans to cold water and linguica
  2. Cook all together until beans are cooked, add more water, if needed
  3. Bring all the above ingredients to a boil for 10 minutes
  4. Then lower until it is cooked
  5. Add kidney beans
  6. Chop boiled linguica, if desired, and add back into the soup
  7. Add salt to taste
