Portuguese Baked Fish Recipe

Ingredients

  • 2 onions, chopped
  • 2 stalks celery
  • 2 tomatoes, chopped
  • 1/4 c. butter or margarine
  • 1/2 c. tomato juice
  • 2 tbsp. lemon juice or white wine
  • 3 cloves garlic, crushed
  • 1 bay leaf
  • salt & pepper.
  • 1-1 1/2 lb. fish fillets

Method

  1. Saute onions, celery and tomatoes in butter until tender
  2. Add juices, garlic and bay leaf
  3. Cook over medium high heat 3 minutes
  4. Place fillets in greased baking dish
  5. Season
  6. Pour sauce over fish
  7. Bake at 350 degrees about 20 minutes, until fish is opaque
  8. Serves 4
