Alcatra Portuguese-Style Roast Recipe

Ingredients

  • 5-6 lb. lean rump roast
  • 1/4 lb. chopped bacon
  • 1 bunch green onions
  • 1 tbsp. cumin
  • 1 tbsp. allspice
  • 1 cube butter
  • 2-3 tbsp. salt, to taste
  • 1 sm. can tomato paste
  • 2-3 bay leaves
  • 6 cloves garlic, chopped
  • 1 bottle red wine

Method

  1. Cut meat into large pieces
  2. Place in roaster
  3. Combine onion, spices, and garlic in small bowl and mix
  4. Layer meat, spice mixture, bacon, ending with bacon
  5. Combine 1 cup wine, salt, and tomato paste
  6. Mix well
  7. Pour over meat and mix with your hand until meat is coated
  8. Pour remaining wine until meat is covered
  9. Cut butter into pats and arrange on top
  10. Cover with foil
  11. Bake at 450 degrees for 1 hour, turn oven down to 350 degrees and finish baking
