Portuguese Sherry Cake Recipe

Ingredients

  • 1 (2 layer) size pkg. yellow cake mix
  • 1 (3 3/4-3 5/8 oz.) instant vanilla pudding
  • 4 eggs
  • 3/4 c. butter flavored cooking oil
  • 3/4 c. cream sherry
  • 1 tsp. butter flavor
  • 2 tsp. ground nutmeg
  • 1/4 c. granulated sugar
  • 1 tsp. cinnamon
  • –TOPPING:–
  • 1 c. sifted powdered sugar
  • 2 tbsp. milk
  • 1/2 tsp. vanilla
  • 1/2 tsp. butter flavor

Method

  1. Combine cake mix, pudding mix, eggs, oil, sherry, butter flavor and nutmeg
  2. Blend at low speed, until moist
  3. Beat at medium speed 2 minutes
  4. Pour 1/3 batter into well greased and floured 10 inch tube pan
  5. Combine together 1/4 cup granulated sugar and 1 teaspoon cinnamon
  6. Sprinkle 1/2 of cinnamon-sugar mixture over the batter in pan
  7. Add another 1/3 of batter
  8. Sprinkle other 1/2 of cinnamon-sugar mixture, then top with remaining 1/3 of batter
  9. Bake at 350 degrees for 45-50 minutes
  10. Let cool 10 minutes
  11. Remove to wire rack
  12. Topping: Mix 1 cup sifted powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla and 1/2 teaspoon butter flavor
  13. Spoon over warm cake
