Roast Garlic Mashed Potatoes With Sour Cream

Garlic Mashed Potatoes With Sour Cream

Ingredients

  • 1 garlic head
  • 1 tsp oil
  • 1kg potatoes peeled, diced
  • 120 ml single cream
  • 100 g butter
  • 120 ml sour cream, divided
  • salt and pepper to taste

Method

  1. Preheat oven to 400.
  2. Slice off the top of garlic head so that all cloves are showing and wrap in foil, drizzled with oil.
  3. Roast for about 50-60 minutes or until garlic is completely tender.
  4. Cook and drain potatoes then rinse potatoes in warm water to remove starch. (optional)
  5. Peel and mash the roasted garlic and butter then combine with the mash including the liquid.
  6. Top with a dollop of sour cream or butter to serve.
