Roast Garlic Mashed Potatoes With Sour Cream
Ingredients
- 1 garlic head
- 1 tsp oil
- 1kg potatoes peeled, diced
- 120 ml single cream
- 100 g butter
- 120 ml sour cream, divided
- salt and pepper to taste
Method
- Preheat oven to 400.
- Slice off the top of garlic head so that all cloves are showing and wrap in foil, drizzled with oil.
- Roast for about 50-60 minutes or until garlic is completely tender.
- Cook and drain potatoes then rinse potatoes in warm water to remove starch. (optional)
- Peel and mash the roasted garlic and butter then combine with the mash including the liquid.
- Top with a dollop of sour cream or butter to serve.
