Wheat Berry Waldorf Pressure Cooker Recipe

Ingredients

SERVES 8

  • 2 to 3 cups pressure-cooked wheat berries, at room temperature

WALDORF DRESSING

  • 1 cup plain yogurt (not Greek)
  • 1 cup mayonnaise or Vegenaise
  • 1/3 cup sour cream
  • ¼ cup orange or tangerine juice

SALAD

  • 2 large Fuji or Granny Smith apples, cored and chopped
  • 2 Honeycrisp or Braeburn apples, cored and chopped
  • juice of 1 lemon
  • 3 ribs celery, chopped
  • 1 cup red or green seedless grapes, halved, or pomegranate seeds
  • ½ cup slivered blanched almonds
  • ½ cup dried tart cherries

Method

  1. In a small bowl, whisk the dressing ingredients together until smooth
  2. In a large serving bowl, combine the wheat berries and apples, then add the lemon juice and toss
  3. Add the celery, grapes, almonds, and cherries and toss with just enough of the dressing to lightly coat all the salad ingredients; you might not use all the dressing
  4. Store in the refrigerator, covered, 30 minutes to 2 hours, to let the flavors meld
  5. Serve the salad chilled
