Texas Chicken Slow Cooker Recipe

Ingredients

  • 1 cup (185 g) uncooked long-grain rice
  • 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes
  • 1 can (6 ounces, or 170 g) no-salt-added tomato paste
  • 700 ml water
  • 2 tbsps (15 g) salt-free mexican seasoning
  • 4 boneless skinless chicken breasts, cut into 1-inch 2
  • 5 cm) cubes 1½ cups (240 g chopped onions
  • 1 cup (150 g) chopped green bell pepper
  • 115g diced green chilies
  • 1 tsp garlic powder
  • ¼ teaspoon pepper

Method

  1. Combine all ingredients in large slow cooker
  2. Cover and cook on low 4 to 4½ hours or until rice is tender and chicken is cooked
  3. Yield: 8 servings
  4. Per serving: 285 g water; 178 calories (5% from fat, 27% from protein, 69% from carb)
