Hot Rice And Oatmeal With Dried Fruit And Coconut Pressure Cooker Recipe

Ingredients

SERVES 4 to 6 – Cooker: 5- to 7-quart – Time: 7 minutes at HIGH pressure

  • 1 cup old-fashioned or thick-cut rolled oats
  • 2/3 cup short- or long-grain brown rice, soaked 4 hours or overnight in water to cover and drained
  • 2 tablespoons oat bran or toasted wheat germ
  • ½ teaspoon apple pie spice or ground cinnamon with a pinch of cloves, nutmeg, and allspice added
  • pinch sea salt.
  • 5 cups water
  • ½ cup golden raisins or dried cherries, blueberries, or cranberries
  • ¼ cup chopped dried pitted prunes
  • ¼ cup chopped dried apricots
  • 1 tablespoon butter
  • 2/3 cup shredded sweetened coconut, for serving
  • milk, half-and-half, almond milk, coconut milk, or rice milk, for serving.

Method

  1. In a 5- to 7-quart pressure cooker, combine the oats, rice, oat bran, spice, salt, and water
  2. Stir in the dried fruit and butter
  3. Close and lock the lid
  4. Place a heat diffuser on the burner and the pressure cooker on the diffuser
  5. Set the burner heat to high
  6. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  7. Set a timer to cook for 10 minutes
  8. Remove the pot from the heat
  9. Open the cooker with the Natural Release method; let stand for 20 minutes
  10. At time, if the pressure is not all released, open the valve
  11. Stir well and scoop into serving bowls
  12. Sprinkle each serving with the coconut
  13. Serve with a few splashes of the milk of your choice
