Bhutanese Red Rice With Ginger And Cilantro Pressure Cooker Recipe

Ingredients

SERVES 4 – Cooker: 5- to 7-quart – Time: 9 minutes at HIGH pressure

  • 1 tablespoon unsalted butter
  • 2 teaspoons minced peeled fresh ginger
  • ½ cup chopped green onions
  • 1 cup Bhutanese red rice, rinsed
  • 1 (3-finger) pinch sea salt
  • 1¼ cups low-sodium chicken or vegetable broth
  • 1/3 cup chopped fresh cilantro
  • juice of 1 lime.

Method

  1. In a 5-to 7-quart pressure cooker over medium-high heat, melt the butter
  2. Add the ginger and green onions and cook, stirring a few times, until softened, about 2 minutes
  3. Add the rice and stir to coat with the butter
  4. Add the salt and broth
  5. Close and lock the lid
  6. Set the burner heat to high
  7. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  8. Set a timer to cook for 9 minutes
  9. Remove the pot from the heat
  10. Open the cooker with the Natural Release method; let stand for 10 minutes
  11. At time, if the pressure is not all released, open the valve
  12. Be careful of the steam as you remove the lid
  13. Spoon the rice into a serving bowl, stir in the cilantro and lime juice, and serve
