Unstuffed Dolma Casserole Slow Cooker Recipe

Active Time 15 minutes

Saute; Pressure/Manual (High) Natural/Quick Release

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon minced garlic
  • 1 cup chopped yellow onions
  • 1 pound 85% lean ground beef
  • 1 cup water
  • 1 cup basmati rice, rinsed and drained
  • 8 ounces brined grape leaves, drained and chopped
  • 1 tablespoon dried parsley flakes or ¼ cup chopped fresh parsley
  • 1 teaspoon ground allspice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • cup fresh lemon juice
  • ¼ cup chopped fresh mint
  • tzatziki, for serving


  1. Select SAUTE on the Instant Pot
  2. When the pot is hot, add the olive oil
  3. When the oil is hot, add the garlic and onions
  4. Stir to combine
  5. Add the beef and cook, stirring just enough to break up the clumps, for 2 to 3 minutes (don’t worry about it being fully cooked at this point)
  6. Add the water, rice, grape leaves, parsley, allspice, salt, and pepper
  7. Stir well to combine
  8. Select CANCEL
  9. Secure the lid on the pot
  10. Close the pressure-release valve
  11. Select MANUAL and set the pot at HIGH pressure for 4 minutes
  12. At the end of the cooking time, let the pot sit undisturbed for 10 minutes, then release any remaining pressure
  13. Gently stir in the lemon juice and mint
  14. Serve with tzatziki on the side
