Ingredients

Saute; Pressure/Manual (High) Natural/Quick Release
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced garlic
- 1 cup chopped yellow onions
- 1 pound 85% lean ground beef
- 1 cup water
- 1 cup basmati rice, rinsed and drained
- 8 ounces brined grape leaves, drained and chopped
- 1 tablespoon dried parsley flakes or ¼ cup chopped fresh parsley
- 1 teaspoon ground allspice
- 1 teaspoon salt
- 1 teaspoon black pepper
- cup fresh lemon juice
- ¼ cup chopped fresh mint
- tzatziki, for serving
Method
- Select SAUTE on the Instant Pot
- When the pot is hot, add the olive oil
- When the oil is hot, add the garlic and onions
- Stir to combine
- Add the beef and cook, stirring just enough to break up the clumps, for 2 to 3 minutes (don’t worry about it being fully cooked at this point)
- Add the water, rice, grape leaves, parsley, allspice, salt, and pepper
- Stir well to combine
- Select CANCEL
- Secure the lid on the pot
- Close the pressure-release valve
- Select MANUAL and set the pot at HIGH pressure for 4 minutes
- At the end of the cooking time, let the pot sit undisturbed for 10 minutes, then release any remaining pressure
- Gently stir in the lemon juice and mint
- Serve with tzatziki on the side
