Spiced Chicken Crock Pot Stew Slow Cooker Recipe
Ingredients
- 1 1/2 cups red lentils
- 2 1/2 lbs. boneless, skinless chicken thighs, trimmed
- 1 tbsp butter
- 2 tsp extra-virgin olive oil
- 4 cups chopped red onions
- 5 cloves garlic, finely chopped
- 1 tbsp minced fresh ginger
- 5 tbsp berbere spice blend
- 1/2 cup dry red wine
- 1 14-oz. can diced tomatoes
- 2 cups reduced-sodium chicken broth
Method
- Rinse lentils in cold water, drain and spread in an even layer on the bottom of the crock pot
- Add chicken on top of the lentils
- In a large skillet, heat butter and oil over medium-high heat
- Once butter is melted, add onions cooking until soft and translucent
- Add garlic and ginger and cook until fragrant
- Add berbere and cook 2 to 4 minutes
- Mix in wine, scraping the onion mixture from the bottom of the pan,
- Add in tomatoes with their juice
- Place the onion mixture in the crock pot on top of the chicken
- Pour in broth
- Place lid on crock pot and cook until the chicken is falling-apart ( 5 hours on High or 7 to 8 hours on Low)
