Spiced Chicken Crock Pot Stew Slow Cooker Recipe


  • 1 1/2 cups red lentils
  • 2 1/2 lbs. boneless, skinless chicken thighs, trimmed
  • 1 tbsp butter
  • 2 tsp extra-virgin olive oil
  • 4 cups chopped red onions
  • 5 cloves garlic, finely chopped
  • 1 tbsp minced fresh ginger
  • 5 tbsp berbere spice blend
  • 1/2 cup dry red wine
  • 1 14-oz. can diced tomatoes
  • 2 cups reduced-sodium chicken broth


  1. Rinse lentils in cold water, drain and spread in an even layer on the bottom of the crock pot
  2. Add chicken on top of the lentils
  3. In a large skillet, heat butter and oil over medium-high heat
  4. Once butter is melted, add onions cooking until soft and translucent
  5. Add garlic and ginger and cook until fragrant
  6. Add berbere and cook 2 to 4 minutes
  7. Mix in wine, scraping the onion mixture from the bottom of the pan,
  8. Add in tomatoes with their juice
  9. Place the onion mixture in the crock pot on top of the chicken
  10. Pour in broth
  11. Place lid on crock pot and cook until the chicken is falling-apart ( 5 hours on High or 7 to 8 hours on Low)
