Diabetic Low-Fat Zucchini-Tomato Casserole Recipe

Ingredients

  • 1/4 c butter
  • 3 med zucchini, sliced 1/8 inch
  • thick
  • 1/8 tsp garlic powder
  • 4 med tomatoes, sliced 1/4 inch
  • thick
  • 1 lg onion, sliced 1/8 inch
  • thick
  • 1/2 lb fresh mushrooms, sliced 1/8 inch
  • thick
  • 1/2 cup mozzarella cheese, grated
  • Method

  • Preheat oven to 400 degrees.
  • Saute zucchini in butter with very light sprinkling of garlic powder.
  • Layer zucchini, tomatoes, onions, and mushrooms in 2-quart casserole.
  • Top with cheese.
  • Bake 15 minutes.
  • Makes 6 to 8 servings.
