Low Fat Shrimp Scampi Recipe

Ingredients

  • 1 teaspoon butter
  • 2 teaspoons olive oil
  • 3 garlic cloves, minced
  • 1 pound shrimp, peeled
  • 1/4 cup white wine
  • 1 lemon, juice of
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup finely chopped italian parsley
  • cooked noodles or rice, optional

  • Method

  • In saute pan, melt butter and oil.
  • Add garlic; saute 1 minute; add shrimp.
  • Saute 1 minute; add wine, lemon juice, salt and pepper.
  • Saute quickly until sauce reduces and shrimp turns pink, about 3 minutes.
  • Do not overcook 2.
  • Serve with sauce over cooked noodles or rice.
  • Sprinkle with parsley; garnish with lemon wedges.
  • Makes 6 servings.
