Low Fat Marinated Beef And Pasta Salad Recipe

Ingredients

  • 1 pound mostaccioli or ziti
  • 2 tablespoons vegetable oil
  • 3 tablespoons lemon juice
  • 2 tablespoons red-wine vinegar
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh thyme
  • 2 tablespoons dijon mustard
  • 1/2 cup fresh parsley, chopped
  • 10 large mushrooms, sliced
  • 2 cups flank steak or roast beef, julienned
  • 2 cups halved snow peas
  • 1 red bell pepper, ribs and seeds removed, julienned
  • salt, to taste
  • freshly ground black pepper, to taste
  • Method

  • Prepare pasta according to package directions; drain.
  • In large bowl, combine vegetable oil, lemon juice, vinegar, oregano, thyme, mustard, parsley, mushrooms and steak.
  • Add snow peas and bell peppers; mix thoroughly.
  • Add pasta and mix again.
  • Serve immediately, or refrigerate 1 hour and serve cold.
  • Makes 10 servings.
  • Preparation time: 20 minutes.
  • Cooking time: 10 minutes.
