Szechuan Noodles Recipe

Ingredients

Serving Size : 4

  • 8 ounces angel hair pasta
  • 2 tablespoons peanut oil
  • 1/2 pound BBQ pork; cooked – slivered
  • 5 cups vegetables – finely shredded
  • 1 cup chicken broth
  • 1/3 cup hoisin sauce
  • 3 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 1 teaspoon chili paste **

Method

  1. Use any combinations of; green onions, snow peas, carrots, celery, red and yellow peppers, zucchini, etc.
  2. Chinese chili paste with garlic.
  3. Use more or less depending on taste.
  4. Cook pasta, set aside.
  5. Heat oil in a large wok.
  6. Add pork and veggies and stir fry until vegetables are crisp-tender, about 2 minutes.
  7. Push to sides of pan, leaving a well in the center of the wok.
  8. Add chicken broth, hoisin sauce, tomato paste, soy sauce and chili paste to wok.
  9. Bring to a boil and cook until thickened.
  10. Incorporate veggie/pork mixtures and stir well.
  11. Add noodles and toss until well coated.
  12. Serve.
  13. This is also great as a cold salad.
