Penne With Peanut Pesto Recipe

Ingredients

Makes 4 servings

  • 3 garlic cloves, minced
  • 1/2 cup unsalted roasted peanuts
  • 1 teaspoon sugar
  • 1/4 cup soy sauce
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon Asian chili paste
  • 1/4 cup creamy peanut butter
  • 2 tablespoons toasted sesame oil
  • 1 pound penne
  • 1/4 cup chopped fresh cilantro, for garnish
  • 2 tablespoons chopped green onions, for garnish

Method

  1. In a food processor, combine the garlic, peanuts and sugar and process to a paste
  2. Add the soy sauce, lime juice and chili paste and process until well blended
  3. Add the peanut butter and sesame oil and process until smooth
  4. Transfer to a small bowl and set aside
  5. In a large pot of boiling salted water, cook the penne over medium-high heat, stirring occasionally, until al dente, about 10 minutes
  6. Drain well, reserving 1/3 cup of the pasta water
  7. Transfer the pasta to a large serving bowl
  8. Add the reserved pasta water to the pesto, stirring to make a smooth sauce
  9. Add the sauce and toss gently to combine
  10. Garnish with cilantro and green onions and serve immediately
