Ingredients
Makes 4 to 6 servings
- 1 (8-ounce) can lychees, packed in syrup
- juice of 1 lime
- 1 teaspoon lime zest
- 2 teaspoons sugar
- 1/4 cup water
- 1 ripe mango, peeled, pitted and cut into 1/2-inch dice
- 1 Asian pear, cored and cut into 1/2-inch dice
- 2 bananas, peeled and cut into 1/4-inch slices
- 1 kiwifruit, peeled and cut into 1/4-inch slices
- 1 tablespoon crushed unsalted roasted peanuts
Method
- Drain the lychee syrup into a small saucepan and place the lychees in a large bowl and set aside
- Add the lime juice and zest to the lychee syrup, along with the sugar and water and heat over low heat until the sugar dissolves
- Bring to a boil and remove from heat
- Set aside to cool
- To the bowl containing the lychees add the mango, pear, bananas and kiwifruit
- Drizzle with the reserved syrup, sprinkle with peanuts and serve
