Asian Flavors Fruit Bowl Recipe

Ingredients

Makes 4 to 6 servings

  • 1 (8-ounce) can lychees, packed in syrup
  • juice of 1 lime
  • 1 teaspoon lime zest
  • 2 teaspoons sugar
  • 1/4 cup water
  • 1 ripe mango, peeled, pitted and cut into 1/2-inch dice
  • 1 Asian pear, cored and cut into 1/2-inch dice
  • 2 bananas, peeled and cut into 1/4-inch slices
  • 1 kiwifruit, peeled and cut into 1/4-inch slices
  • 1 tablespoon crushed unsalted roasted peanuts

Method

  1. Drain the lychee syrup into a small saucepan and place the lychees in a large bowl and set aside
  2. Add the lime juice and zest to the lychee syrup, along with the sugar and water and heat over low heat until the sugar dissolves
  3. Bring to a boil and remove from heat
  4. Set aside to cool
  5. To the bowl containing the lychees add the mango, pear, bananas and kiwifruit
  6. Drizzle with the reserved syrup, sprinkle with peanuts and serve
