Subzi Makhani Indian Recipe

Ingredients

  • 2 cups mixed vegetables
  • 3 tbsp butter
  • 1/4 cup green peas
  • 1 small capsicum
  • 1/4 cup water
  • 1/4 tsp garam masala
  • 2 tbsp chopped coriander leaves
  • 1 medium onion
  • 1 tbsp chopped ginger
  • 1 tbsp chopped garlic
  • 1 tbsp chopped green chillies
  • 1 tsp chili powder
  • 2 cloves
  • 1/2 inch cinnamon
  • 2 cardamoms (green)
  • 2 tbsp cashewnuts
  • 1 tsp poppy seeds
  • 2 tbsp oil

Method

  1. Boil the mixed vegetables and peas.
  2. Remove seeds and cut the capsicum.
  3. Chop the onion, coriander leaves and the cashews.
  4. First make a masala paste by browning the onion, ginger, garlic, chilies, chilli powder, cloves, cinnamon, cardamom, cashews and poppy seeds in oil and grinding to a fine paste.
  5. Melt the butter in a separate pan.
  6. Add the mixed boiled vegetables, green peas and capsicum.
  7. Fry on a medium flame for 2 minutes.
  8. Add the masala paste and fry for 3 mintues, stirring.
  9. Add the water, salt and garam masala.
  10. Cook uncovered on a high flame for 2 mintues.
