Tarragon Pasta Salad And Red Green Grapes Recipe

Ingredients

Makes 4 servings

  • 8 ounces penne
  • 1 1/2 cups red seedless grapes
  • 1 cup green seedless grapes
  • 1/4 cup chopped red onion
  • 1 celery rib, minced
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup olive oil
  • 1 tablespoon minced fresh tarragon or 1 teaspoon dried
  • 1/3 cup toasted slivered almonds

Method

  1. In a large pot of boiling salted water, cook the penne, stirring occasionally, until al dente, about 10minutes
  2. Drain well and rinse under cold water
  3. Transfer the pasta to a large bowl and add the red and green grapes, onion and celery
  4. Set aside
  5. In a small bowl, combine the lemon juice, salt and pepper
  6. Whisk in the olive oil until blended, then pour dressing over pasta
  7. Add the tarragon and almonds and toss gently to combine
  8. Serve chilled or at room temperature
