Rotini Almond-Mint Pesto With Orange Zest Recipe

Ingredients

Makes 4 servings

  • 2 garlic cloves
  • 1/2 cup slivered almonds
  • ¾ teaspoon salt
  • 2 cups fresh mint leaves
  • 1/2 cup olive oil
  • 2 teaspoons orange zest
  • 1 pound rotini

Method

  1. In a food processor, combine the garlic, almonds and salt and process until finely chopped
  2. Add the mint and process until ground to a paste
  3. With the machine running, stream in the oil
  4. Transfer to a small bowl and stir in the orange zest
  5. In large pot of boiling salted water, cook the rotini over medium-high heat, stirring occasionally, until al dente, about 10 minutes
  6. Drain well, reserving about 1/2 cup of the pasta water
  7. Transfer pasta to a large serving bowl
  8. Add the reserved pasta water to the pesto, stirring to make a smooth sauce
  9. Add the pesto to the pasta and toss gently to combine
  10. Serve immediately
