Curried Fruit Salad Recipe

Ingredients

Makes 4 to 6 servings

  • ¾ cup vegan vanilla yogurt
  • 1/4 cup finely chopped mango chutney
  • 1 tablespoon fresh lime juice
  • 1 teaspoon mild curry powder
  • 1 Fuji or Gala apple, cored and cut into 1/2-inch dice
  • 2 ripe peaches, halved, pitted and cut into 1/2-inch dice
  • 4 ripe black plums, halved and cut into 1/4-inch slices
  • 1 ripe mango, peeled, pitted and cut into 1/2-inch dice
  • 1 cup red seedless grapes, halved
  • 1/4 cup unsweetened toasted shredded coconut
  • 1/4 cup toasted slivered almonds

Method

  1. In a small bowl, combine the yogurt, chutney, lime juice and curry powder and stir until well blended
  2. Set aside
  3. In a large bowl, combine the apple, peaches, plums, mango, grapes, coconut and almonds
  4. Add the dressing, toss gently to coat and serve
